MOM'S HEARTIER THAN CABBAGE SOUP



Here is one of my family's favorite soups that I make...Heartier Than Cabbage Soup! Very easy to make and pretty much loved by everyone who tries it.

Ingredients
5-6 lb. ground beef
2 small to med. heads cabbage
3 lg. onions
3  28 oz. cans diced tomatoes
2 cans Italian green beans (the flat kind)
1  28 oz. jar plain or flavored spaghetti sauce

As always, I use a large stock pot to make soups and stews. If you want to make a smaller amount you need to adjust your ingredients accordingly.

So first, you place all your ground beef into the pot and cook it up.


When it's cooked you can drain it if you want to. I don't because I feel the good flavor comes from the drippings, but if you use a less lean ground beef you might want to or you will have too much grease.
Next, chop your 3 onions and add them. I love having my ingredients in large chunky pieces so I don't chop them real small.


Next, chop up your cabbage and place it in the pot. This may pretty much fill the pot, but it will cook down.


Then dump your cans of diced tomatoes and beans in, juice and all. Stir together.




Finally add the jar of sauce, mix well, and add water to bring your liquid over all the ingredients.


Now you will bring back to a boil, then reduce to simmer, and allow it to simmer several hours. In a few hours you have a very hearty cabbage soup that is delightfully filling and flavorful.
